Tasty Bariatric Soup Recipes for the Fall

Soups usually freeze well, and you can even freeze them in ice cube trays for the earlier stages of recovery when your portion sizes are much smaller. High Protein Butternut Squash Soup

Butternut squash soup is creamy, vibrant, and filling. You will only use around ¼ of the butternut squash. Avoid food spoilage by making several batches of this soup to freeze or incorporate roasted squash into your other meals for the week.

Ingredients

  • ½ lb butternut squash (approximately ¼ of the squash), peeled and de-seeded
  • ½ onion, diced
  • 32 oz of almond milk soup base
  • 2 scoops of unflavored protein powder
  • 1 tsp olive oil
  • 1 tsp minced ginger
  • 1 tsp garlic
  • Salt and pepper to taste

Directions

  1. Add the oil and onion to a saucepan and sauté over medium heat until the onion softens and begins to look clear. Add the ginger and garlic and sauté for a minute longer.
  2. Add the squash, soup base, salt, and pepper to the point and bring it to a boil. Reduce the heat and simmer until the squash is soft (approximately 15 minutes).
  3. Add the ingredients to a blender or food processor and puree the ingredients until smooth.
  4. Allow the puree to cool to at least 140 degrees before adding the protein powder. Protein powder can clump and become unpalatable when combined with hot ingredients. Blend again to incorporate the protein powder thoroughly.

High Protein, Savory Tomato Soup

Tomato soup is a classic comfort food, but its protein content is often lacking. You can fix that by once again incorporating unflavored protein powder into the soup. Some individuals struggle with the subtle taste of unflavored protein powder. However, the acidic sharpness of the tomatoes effectively masks the protein powder.

Ingredients

  • 1 28 oz can of crushed tomatoes
  • 1 14 oz diced tomatoes
  • 1 scoop unflavored protein
  • ¼ C parmesan cheese
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Directions

  1. Add the olive oil and garlic to a pan over medium heat and sauté for 30 seconds.
  2. Add all the tomatoes, parmesan, Italian seasoning, salt, and pepper. Bring the ingredients to a simmer and cook for 20 minutes.
  3. Ladle out one cup of soup and allow it to cool to at least 140 degrees Fahrenheit.
  4. Pour the cooled soup into a blender or food processor. Add a scoop of unflavored protein powder and blend until you achieve your desired consistency.
